Uninstall just xdg-desktop-portal-gtk

This will remove just the xdg-desktop-portal-gtk package itself.
Uninstall xdg-desktop-portal-gtk and its dependencies
sudo apt-get remove --auto-remove xdg-desktop-portal-gtk
This will remove the xdg-desktop-portal-gtk package and any other dependant packages which are no longer needed.
Purging your config/data too
If you also want to delete your local/config files for xdg-desktop-portal-gtk then this will work.
Caution! Purged config/data can not be restored by reinstalling the package.
sudo apt-get purge xdg-desktop-portal-gtk
Or similarly, like this xdg-desktop-portal-gtk
sudo apt-get purge --auto-remove xdg-desktop-portal-gtk
