Uninstall just plasma-widget-kdeobservatory

sudo apt-get remove plasma-widget-kdeobservatory

This will remove just the plasma-widget-kdeobservatory package itself.

Uninstall plasma-widget-kdeobservatory and its dependencies

sudo apt-get remove --auto-remove plasma-widget-kdeobservatory

This will remove the plasma-widget-kdeobservatory package and any other dependant packages which are no longer needed.

Purging your config/data too

If you also want to delete your local/config files for plasma-widget-kdeobservatory then this will work.

 Caution! Purged config/data can not be restored by reinstalling the package.
sudo apt-get purge plasma-widget-kdeobservatory

Or similarly, like this plasma-widget-kdeobservatory
