To uninstall e2guardian just follow these instructions.
sudo apt-get remove e2guardian
This will remove just the e2guardian package itself.
sudo apt-get remove --auto-remove e2guardian
This will remove the e2guardian package and any other dependant packages which are no longer needed.
If you also want to delete your local/config files for e2guardian then this will work.
sudo apt-get purge e2guardian
Or similarly, like this e2guardian
sudo apt-get purge --auto-remove e2guardian
